I have always liked lentils, but lately, I have started to discover more with them. They are nutritious and filling while low in calories. They cook in less than 30 minutes and there are variety of things you can do with them; from lentil soup and Dahl to different kinds of salads. Today I want to introduce you to this tangy, colorful, nutritious and delicious salad.
Ingredients
1.5 cup lentils
1/3 cup jalapeno stuffed olives
2 green onions
2 Tbs feta crumbles
1/3 sliced sun-dried tomatoes
1 Tbs slightly chopped cilantro
3 Tbs Olive oil
Juice from 1 lime
salt and pepper to taste
Directions
Cook the lentils until they are soft. Set them aside to cool down.
Clean and wash the green onions and slice them like the picture above. Slice the olives like the picture above. If you can’t find jalapeno stuffed olives, you can add some pickled jalapeno instead. It gives the salad just the right amount of spice. Cut the sun-dried tomatoes to smaller pieces if they aren’t already small.
Wash the cilantro and chop them just enough to let the aroma out.
Mix everything with the lentils, add the feta crumbles, lime juice, olive oil and salt and pepper. Chill the salad in the fridge for about 15 to 20 minutes and enjoy.
